A Taste of Fall Recipe: Overnight Apple Pie Oatmeal

All the comfort of apple pie in a make-ahead breakfast that is soft, fragrant and easy to portion.

Ingredients

  • 3/4 cup (175 mL) plain Greek yogurt

  • 1/2 cup (125 mL) milk or fortified soy beverage

  • 1 tsp (5 mL) maple syrup

  • 1/2 tsp (2 mL) vanilla extract

  • 1/2 tsp (2 mL) ground cinnamon

  • 1 medium apple, cored and finely diced or grated

  • 1/2 cup (125 mL) large-flake oats

  • 2 Tbsp (30 mL) finely chopped walnuts, optional

Directions

  1. Whisk the yogurt, milk, maple syrup, vanilla and cinnamon
    in a medium bowl.

  2. Stir in the apple, oats and walnuts. Divide between two
    covered containers.

  3. Refrigerate overnight. Stir before serving and add a splash of
    milk if you prefer a thinner texture.

Tip: Grating the apple creates a softer texture and spreads its flavour through every spoonful.

Healthy-aging highlight

Greek yogurt and milk add protein and calcium, while oats, apple and walnuts contribute fibre. Choose a fortified soy beverage if you use a plant-based option.
